South African soups are typically very thick and contain a cut of meat or animal bone to give that delicious rich flavour.  Boontjiesop as it is affectionaly known in Afrikaans or bean soup is one of those soups that we have all grown up with.  Either an aunt, mom or gran made it.  In those days a pressure cooker was the kitchen appliance of the day.  I prefer making it in the slow cooker - low and slow does the trick every time! Please note that legumes (sugar beans) are only permissable during phase 3 of Atkins.

This is a favourite dish of mine, it's so simple and easy to make.  This is a basic and easy stir fry recipe, which could be eaten as a lunch or served at dinner as a side dish.  Stir frying is a great technique for quick cooking of veggies as they are flash fried but still al dente - providing you don't leave them on the stove for too long! Be sure not to over load your wok in order to get a good result.

Once more a lovely evening spent entertaining dear friends at our home.  Socialising is so good for the soul!  Sharing thoughts, idea's, good company and good food.  This pork casserole with sage and cider is so flavoursome and hearty. The expression ..  "I had a party in my mouth" comes to mind.  The apple, sage and cider work well together, the flavours complement each other beautifully - definitely a match made in heaven!  If you are following a low carbohydrate diet just omit the penne noodles and replace with shirataki noodles, low carb veg or even cauliflower rice.

My family really enjoy their baked goodies.  We tend to enjoy our odd treat on the weekend, but I don't enjoy buying the highly processed sugary commercial cookies and biscuits so I decided to make my own healthy bars for those times when the munchies need to be satisfied.  These tend to hit the spot every time!

Slow cooked lamb shanks

We invited some friends for dinner this past Saturday. After much deliberation I decided to make slow cooked lamb shanks as this is the perfect dish for a cold winters evening. To compliment the slow cooked lamb shanks we had creamy mash, with roasted butternut, cauliflower, onions and carrots on the side.  If you are following a low carbohydrate compliant diet just omit the potatoe mash and substitute with low carb mashed turnips or creamy cauliflower mash.
