Low Carb Crustless Quiche Lorraine

Traditional Quiche Lorraine gets a pie crust but this low carb crustless Quiche Lorraine has no grains, gluten or wheat.  A slice of this delicious crustless Quiche Lorraine makes a quick and easy lunch or dinner with a side plate of salad or roast veggies.

Crustless Quiche Lorraine

If you don't have Gruyere or Swiss cheese feel free to substitute with strong cheddar cheese.

Crustless Quiche Lorraine ingredients:

  • 5 slices bacon (diced)
  • 1/2 cup chopped onion
  • 2 tablespoons of olive oil
  • 8 eggs beaten
  • 1 cup of Gruyere or Swiss or Strong Cheddar - grated.
  • Quarter of a cup milk - 50ml  (4tbs or 2 ounces) - substitute with cream if so preferred
  • 1 tablespoon fresh finely chopped parsley
  • Salt and pepper to taste

Crustless Quiche Lorraine cooking instructions:

1.  Pour olive oil into warm pan.
2.  Fry onion and bacon "bits" till browned.
3.  In a mixing bowl add fried onion and bacon mixture to the milk, beaten eggs, parsley, and cheese.
4.  Pour "mixture" into quiche or pie dish.
5.  Bake 180C (350F) for 40 mins.
6.  Stand for 5 mins before serving.
