My family really enjoy their baked goodies.  We tend to enjoy our odd treat on the weekend, but I don't enjoy buying the highly processed sugary commercial cookies and biscuits so I decided to make my own healthy bars for those times when the munchies need to be satisfied.  These tend to hit the spot every time!

Adam & Eve discovered that the most forbidden fruit is always the most wanted!  There’s something about that apple cinnamon combination that’s so incredibly refreshing. It’s a completely classic combo that I just can’t get enough of.  At 267 kilojoules a square you can enjoy these without any guilt what so ever!

Makes 16 squares
1 square = 267 kilojoules, 2.4 g fat, 4 g carbs, 8 g protein

Low carb apple and cinnamon protein bars ingredients:

  •     4 scoops vanilla whey protein powder
  •     1/2 cup almond flour
  •     2 tsp baking powder
  •     1/4 tsp salt
  •     2 tsp cinnamon
  •     1/4 tsp nutmeg
  •     1/4 tsp allspice
  •     3 egg whites
  •     1/2 cup cream cheese
  •     1 tsp vanilla extract
  •     1 medium apple - grated (large holes on grater)

Low carb apple and cinnamon protein bars cooking directions:

Spray a 20 centimetre Pyrex dish with non-stick spray. Preheat oven to 350 degrees. In a large bowl, combine protein powder, almond flour, baking powder, salt, cinnamon, nutmeg and allspice. Whisk together and set aside.

In a smaller bowl, combine egg whites, sweetener, cream cheese and vanilla. Whisk until well incorporated and then add the wet ingredients to the dry and mix again.

Fold in grated apple and mix until combined.

Pour batter into the prepared dish and bake at 350 degrees ~ 662F for 25 minutes.
