Oven baked sweet potatoe chips

If you have a family of fussy eaters, especially when it comes to veggies, you are in for a huge suprise.  They will LOVE these oven baked sweet potatoe chips! Please note that sweet potatoes and starchy veggies, are only permissable during phase 3 of Atkins.(Pre-Maintenance)

Oven baked sweet potatoe chips

My baking times are approximate. It all depends on how thick you cut the wedges or rounds of sweet potatoes. Try to cut them with a even thickness so they all cook at about the same rate. For best browning results bake only one sheet at a time.

Oven baked sweet potatoe chips:

  •     1kg sweet potatoes (35.2oz) -  about 3 large ones (purple or yellow skin its your choice)
  •     1/4 cup olive or oil of your choice in a spray bottle
  •     1 Tbsp salt
  •     1-2 Tbsp spice of your choice i.e. chilli powder, smoked paprika, curry spice,  Cajun spice etc

Oven baked sweet potatoe chips:

1. Preheat oven to 220°C ~ 420 degrees F
2. Peel the sweet potatoes and cut off the ends.
3. Cut the potatoes in half lengthwise.
4. Cut each into chips "strips" or into wedges.
5. Alternately, you can slice the peeled sweet potato into disks either with a mandoline or a sharp knife.
6. Spread the sweet potatoes out in a single layer on a pre heated baking sheet.
7. Spray the chips with the oil until liberally coated and add spice of your choice.
8. Bake for a total of 25 to 30 minutes.
9. After the first 15 minutes, remove the baking sheet from the oven and turn over all of the sweet potato chips
10.Return to the oven and bake for another 10-15 minutes, or until they are well browned. Let cool for 5 minutes before serving.
